The rare second edition, printed by the Giunti at Florence in 1610 and considerably scarcer than the first of 1600. Soderini\'s treatise carries one of the earliest printed appearances of Sangiogheto — the grape now known as Sangiovese — listed among the varieties valued for producing wine in quantity: \"the Voltoiane, the Schiavene nere, the Sangiovese — vines praised for making a great deal of wine — the Cornicchioni, the Trebbiani.\" The register is telling. In 1610 the grape earns its place for yield and reliability, not for finesse; four centuries later the same variety underpins Chianti Classico, Brunello di Montalcino and Vino Nobile di Montepulciano.
Soderini (1526–1596), a Florentine nobleman and agronomist, writes as a working landowner: which training system to prefer — open vineyard, rows, stumps, small trees, or pergola — and what each costs you. He allows that the pergola suits the vine\'s natural climbing habit and yields more clusters, while warning that vines trained too high give less concentrated fruit, and that smaller plantings often make the better wine. The yield-versus-quality argument, already fully formed. Davanzati Bostichi\'s Coltivazione toscana, issued with it as usual, treats pruning and spacing on pergolas and supplies a vocabulary of Italian names for fruits and matters of husbandry. The Accademia della Crusca admitted Soderini\'s text to its canon of authorities for the language.
