Shiitake grows best on oak logs followed closely by sugar maple and other hardwoods.Fresh cut logs should be used to prevent competitor fungi although it is best to allow the lg to rest, off the ground after fresh cutting for 2-3 weeks prior to plugging.
A bit from 5/16\"-11/32\" is commonly used including the metric 8.5mm in between. I sell these on my shop as well and have some plug drill bit combo packs. Many suppliers have adapters that fit angle grinders that make the process much faster. Also a collar can be used on the bit (or a simple wrapping of tape) to ensure appropriate hole depth.
